The Story Behind the Signature Collection

The Signature Collection brings together twelve of our most defined chocolates, each one built around exceptional single origin chocolate and shaped by my background as a pastry chef.

It is a collection designed to feel complete. Not seasonal, not experimental for the sake of change, but a considered edit of flavours I return to, refine and stand behind.

Each chocolate has been developed to sit within a wider tasting experience. Some are bright and lifted, others deeper and more grounding. Together, they are intended to give space for preference, discovery and familiarity in equal measure.

Atelier has always been about flavour first. About chocolate that is respected for what it is, not overworked or disguised. This collection brings that thinking into its most focused form so far.


Why I created it

The idea for the Signature Collection came from a desire to create a fixed point within our range. Twelve flavours that represent Atelier Chocolates at its most defined.

Each one is built around beautiful single origin chocolate, chosen for its character rather than as a backdrop. From there, I’ve drawn on years spent in pastry kitchens, working with classic flavour combinations, seasonal ingredients and the balance that sits at the heart of plated desserts.

I wanted every chocolate in the box to feel like it has a place. Something you could return to, or gift with confidence, knowing there will be at least one flavour that feels like it was made for you.

This collection is also about permission. We are quick to buy something thoughtful for someone else, yet often hesitate when it comes to ourselves. I wanted this to feel like a box that could be opened without a reason. A small moment that belongs entirely to you.


What “signature” means here

The Signature Collection will always be twelve core flavours. Over time, one or two may gently shift if a seasonal ingredient or idea feels too compelling to ignore, but the intention is consistency.

It is something to be known for. A collection that becomes part of how people understand Atelier Chocolates.

It also reflects how I see gifting. These chocolates are designed for considered moments, for sharing, for cutting in half and tasting together, or for quietly working through a box over a few days with no agenda at all.


The philosophy behind the flavours

When I develop chocolates, I am rarely interested in being experimental for the sake of it. Chocolate should be enjoyable first.

My starting point is often memory. Flavours I remember from childhood, combinations I worked with in professional pastry kitchens, or classics that people already know and love in some form.

From there, I refine rather than reinvent.

Within this collection there is balance. Some chocolates lean sweeter, others more acidic or floral. There is a nutty profile, a sea salt caramel that has become a signature in its own right, and a series of single origin ganaches that are intentionally simple, allowing the chocolate itself to lead.

Then there are pieces with layers. Chocolates that reveal themselves as you cut through them, such as a Blackforest with cherry pâte de fruit, white chocolate ganache and an amaretto dark milk centre.

It is not about proving technique. It is about flavour that makes sense the moment it is tasted.

The twelve chocolates in the Signature Collection are:

Each box includes a tasting menu, detailing origin and the primary and secondary notes of every chocolate. It is designed to guide the experience without dictating it.


A personal favourite

If I had to choose one, it would be the strawberry elderflower.

There is something about its clarity. A clean fruit profile with a gentle floral lift that feels particularly right at this time of year. It is simple, but with a quiet complexity that reveals itself as it melts.

It is also one of those chocolates that does not need explanation. It simply works.


Craft, colour and restraint

Visually, I wanted this collection to feel deeper and more grounded. Richer tones, warmer reds, darker browns.

I have never felt drawn to overly bright or highly decorative finishes. At one point I found myself trying to demonstrate every technique at once, and then realised I did not actually enjoy the result.

Someone once said, quite simply, “well don’t do it then.” That stayed with me.

There is confidence in restraint. In choosing what you enjoy making and standing behind it, rather than proving what is technically possible in a single box.

Each bonbon begins almost in reverse. The design comes first, then colour, then shell, then filling. It is a layered process where each decision shapes the next.

Even small choices, such as whether to let the chocolate remain its natural colour or introduce lustre powders, change the final experience entirely.


Craft and process

Everything in this collection is tempered and finished by hand. Fillings are made, piped and capped entirely in-house.

There are no shortcuts in the process.

The chocolate itself is intentionally simple in composition: climate positive, with no more than four ingredients in milk chocolate and three in dark chocolate. Cocoa, cocoa butter and raw cane sugar.

I understand why larger production methods exist, but for me, removing that level of craft would change what Atelier Chocolates is.

There is a point where efficiency replaces intention, and I have always preferred to stay on the side of intention, even if it means producing less.


How it is meant to be enjoyed

This is a collection made for people who care about flavour. For those who notice detail, who enjoy chocolate as something to be tasted rather than consumed quickly.

It is also designed for shared moments.

Some of the most meaningful stories I hear are from people who cut the chocolates in half, tasting them slowly together, turning it into an experience rather than a treat.

It might be a dinner with friends, a quiet evening at home, or a moment of gifting where the act of choosing feels as considered as the chocolate itself.

And increasingly, I hope it is also a collection people choose for themselves. Without needing a reason.


The Signature Collection is now available

The Signature Collection is now available online and represents a natural extension of how Atelier Chocolates has evolved over the last five years.

It feels like a clear expression of what we stand for: flavour-led, carefully made, and grounded in craft.

I am looking forward to hearing which chocolates become personal favourites, and how the collection is experienced once it leaves the kitchen.
